Gut Healing Chicken & Vegetable Soup

Ingredients:

1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1-inch piece of fresh ginger, grated
4 cups chicken broth
2 cups cooked chicken breast, shredded
1 cup chopped kale or spinach
1 cup chopped zucchini
1 teaspoon turmeric powder
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
Salt and pepper, to taste
Fresh cilantro or parsley for garnish (optional)

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
  2. Add the minced garlic and grated ginger to the pot. Sauté for another minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 10 minutes.
  4. Add the cooked shredded chicken, chopped kale or spinach, and chopped zucchini to the pot. Stir in the turmeric powder, ground cumin, dried thyme, salt, and pepper.
  5. Cover the pot and simmer for an additional 10-15 minutes until the vegetables are tender.
  6. Taste the soup and adjust the seasonings if needed.
  7. Ladle the Gut-Healing Chicken and Vegetable Soup into bowls. Garnish with fresh cilantro or parsley if desired.
  8. Serve the nourishing and gut-healthy soup warm!

NOTE
Feel free to customise the recipe by adding other gut-friendly vegetables such as capsicums or mushrooms. You can also add a squeeze of lemon juice for extra flavour and a boost of vitamin C. Adjust the seasonings according to your taste preferences.
