Almond Joy Energy Balls

Ingredients:

1 cup pitted dates
1 cup raw almonds
1/2 cup unsweetened shredded coconut
2 tbsp cocoa powder

Instructions:

  1. In a food processor, blend dates, almonds, shredded coconut and cocoa.
  2. Using your hands, roll the mixture into bite-sized balls.
  3. Roll in shredded coconut and place on a parchment-lined tray or plate.
  4. Chill in the refrigerator for at least 1 hour before serving.

Store in an airtight container in the fridge.
