ANZAC Biscuits


These are a healthier version to the traditional Anzac Biscuit, not only around ANZAC time, but all throughout the year.

This recipe has been reproduced with the permission of Terrie Beresford from New Age Naturopathics.

Ingredients:

1 cup ground almonds
2 cups organic rolled oats
1 cup ground organic rolled oats
3/4 cup organic desiccated coconut
2 Tbsp water
1/4 cup walnuts (chopped)
100ml organic coconut oil
80ml organic honey or maple syrup
2 tsp vanilla essence or 1 tsp paste

Instructions:

  1. Heat oven to 150°C.
  2. Combine almond meal, rolled oats, ground oats, coconut and walnuts in a bowl.
  3. Add coconut oil, maple and vanilla and mix through until well combined.
  4. Divide into balls around 2.5cm in diameter and place on a baking tray lined with baking paper:
  5. Bake for 25-35 minutes until golden and cooked through.
  6. Rest on the tray until cool.
  7. Store in an airtight container for up to 2 weeks.
